If we once knew Christ according to flesh, we do so no longer
The Christ who was known "according to flesh" was the mere human substitute, the actor who played the role of Christ during the sacred drama. That same actor, seen "according to spirit" but only for the short interval of the sacred drama, was the spiritual Christ of the Hymn to Philippians, who assumed the form of a servant, etc.
So Paul was comparing the mere particular knowledge of a Simon of Cyrene, the human actor in the part of Christ during the sacred drama, with the general knowledge kata sarka: vain being the former, vain being the latter, too.
