Who Are Those Who Say That Adam Was Fashioned on the 7th Day

In the Armenian Commentary on Genesis (usually attributed to Ephrem):
And [with regard to] those who say that Adam was fashioned on the seventh day, they are reprehended and censured by that which says that on the sixth day the heavens and the earth and all their hosts were completed: And God completed all His works on the sixth day." And that you might get this clear in [your] mind, look how [Moses] says, These are the generations of heaven and earth on the day on which they were established. That is, he was relating the beginning of [God's] creation when he said, On the day on which God made heaven and earth.” Which day [is that] but the first one! On that day, he said, there were not yet any trees of the field, because they came to be on the third day. But if someone were to say that the earth had not yet produced at the time when [the earth] was told to bring forth; this is not the same thing. For when [the earth] was commanded to bring forth, it is written: it brought forth.94 And Adam, [Moses] said, had not yet put his hand to work on the earth that is on that first day on which [God] made heaven and earth, which is what he had said above. And because [Moses] repeated it here and said, "God created Adam,” following that first [account] where he recounted that these too had not yet come to be on [the earth], he quickly repeated the account.
How on earth could Adam have been made on the seventh day?

I suppose it follows from a very literary reading of Genesis. God created 'man' (plural) in Genesis 1:27, the sixth day. Then God created Adam the following day (Genesis 2:7). the confusion stems from 'man' and 'Adam; being the same word in Hebrew.

I wonder if it has something to do with Mark 2:27 being a bad translation of something originally written in Hebrew or Arabic

Τὸ σάββατον διὰ τὸν ἄνθρωπον ἐγένετο, καὶ οὐχ ὁ ἄνθρωπος διὰ τὸ σάββατον

What if διὰ was a bad rendering

I don't think you can read that a " day of rest was in between: Genesis 2:2 says that God rested. But then God blessed the day and made it holy - which indicates God finished his resting already on the seventh day. The story then flows directly into the creation of Adam, without any night intervening. So it is still the seventh day in Genesis 2:7.
