And remember, it is not the Gospel of Thomas that teaches doctrine... doctrine comes from scripture. It teaches how to read the mystery of Christ hidden in riddle.

The simple answer is that each saying of Thomas is an example of a type of riddle used by NT authors as they exegete the OT. I have applied those types of riddles to the parable of the mustard seed in the example given.
