Stop drinking only water, and use a little wine because of your stomach and your frequent illnesses.
(1Ti 5:23 NIV)
------------------------------
Is this scientifically true?
Is it the opinion of Paul or inspired by the Holy Spirit?
Scientifically speaking, no. There were some studies that suggested that drinking a small amount of red wine (one glass) per day would be beneficial, but those were debunked. You can eat blue grapes or similar fruit or veggies to get a better effect.
Historically speaking, yes, as there was no access to clean water in old times, unlike today. Drinking water usually meant ingesting lots of bacteria and parasites because people didn't know how diseases were caused and spoiled most of their water sources, so it was potentially deadly. In Europe, pretty much all people, including children, drank (rather dilute) beer and wine, because those were the only safe sources of water (the process of making wine and beer eliminates disease carriers). People didn't get old though.
Regarding your second question, I guess you will have to ask the Holy Spirit I will leave that to yourself.

I want historical evidence says that it was because of the water source!
The text is clear that he makes himself as a doctor and wants to Treats stomach and frequent illnesses!!

LOL ... But If it is a historical and scientific error .. Some will say that his personal opinion
I assume that passage refers to a rectification of liturgical practices where gnostic groups would only drink water in their eucharist and the proto-catholics used wine. As the churches merged they mixed both as seen in the Eastern Orthodox church today. Timothy is a church manual after all.
The metric to judge if one is a good exegete: the way he/she deals with Barabbas.
Who disagrees with me on this precise point is by definition an idiot.-Giuseppe

Oh really ... What is the evidence for this !!
Panarion 42 3,3 Celibacy14 too is preached by Marcion himself, and he preaches
fasting on the Sabbath. Marcionite supposed mysteries are celebrated in
front of the catechumens.15 He uses water in the mysteries
other Antimarcionism in Timothy
1 Tim. 6:20 O Timothy, guard the deposit entrusted to you. Avoid irreverent chatter and the opposing arguments [Antithesis] of so-called “knowledge [Gnosis],

This can be true.... but the text is talking about a illnesses ... not about fasting !!
Even if this is the historical reason .. it is not scientifically acceptable !!
